What We're Eating:

Here at Greenlight we are OBSESSED with Fiber Gourmet’s pasta products. Seriously, obsessed!!! Fiber Gourmet is a unique company that has created a line of pasta’s (including, but not limited to, mac n cheese, lemon and pepper, and Cajun spice) that is SUPER low fat AND has 40% fewer calories than standard pasta. This means we get to eat pasta without feeling guilt over a fatty, carb driven meal. Not only does this pasta have fewer calories than standard pasta, but it also has 18grams of fiber in each serving, which helps you feel full and satisfied after a meal. It has everything Greenlight looks for in a food: low-fat, lower calorie, high fiber, and tastes great!!! If you love pasta like we do at Greenlight, you HAVE to check these products out. With all the fun pasta flavors you can make your pasta Asian inspired with the mushroom blend or into a dessert with the chocolate flavor. A little imagination goes a loooooooong way. Also, check out the fun recipe ideas listed on the website. http://www.fibergourmet.com/default.aspx

Obesity Related News:

Obesity is a major epidemic in the United States. How we address this problem with our nations’ youth remains a question yet to be answered. One college, Lincoln University in Pennsylvania decided to take a direct approach to fight obesity at their college. Students with a BMI (Body Mass Index) of 30 or higher are mandated to take a fitness course that meets three hours per week. Those who are required to take the class cannot graduate unless they complete the fitness course.

It is an interesting way of handling the obesity epidemic but is this requirement fair to those students struggling with their weight? What do you think???

What do we want our children eating at school? This report provides some frightening information about what is being offered or provided at local school cafeterias and vending machines. This report from the Rudd Center also offers nutritional guidelines for schools. I don’t know about you, but I would prefer my kids eating food that has not been processed four times over, covered in grease, and conjured up in a “kitchen” where all the ingredients are chemicals I cannot pronounce. But hey, that’s just what we think over at Greenlight.
